I’m super excited to share my special holiday dessert with you! It’s not a cookie dessert, but a drink. And it’s super easy to make! This is a drink that is from Trinidad & Tobago, where I grew up and it is delicious. Please keep in mind that it does contain alcohol. It’s called ponche à crème. While this is a popular Trinidadian drink, my mom has perfected it to her version, which I will include below.

Ingredients: 6 eggs, peel of 1 lime, 3 cans evaporated milk (low fat), 1 and 1/2 cans condensed milk to taste, 1 teaspoon aromatic bitters, 1/2 teaspoon grated nutmeg, 1/2 cup rum or more.

Method: Whip eggs and lime peel until light and fluffy. Add evaporated milk. Sweeten to taste with condensed milk. Add bitters, grated nutmeg, and rum according to personal taste. Remove lime peel and strain the mixture through a fine sieve if you prefer a smoother consistency. You can also refrigerate for a couple hours or overnight (but you don’t have to). Serve chilled over crushed ice.

Vegetarian version: Substitute 1 and 1/2 cups pumpkin butter or pureed steamed pumpkin for the eggs.

Mom’s version (and my favorite): Use vegetarian version with pumpkin butter, but add a 1/4 cup of brandy and a 1/4 cup of rum for a layered flavor. Also, halve the recipe to start.

***Note: This recipe contains raw eggs. You can replace the 6 eggs in this recipe with 1 1/2 cups of pasteurized egg product or steamed pumpkin / pumpkin butter for a vegetarian alternative as indicated above.

Thanks for checking out my recipe! Enjoy! Be sure to enter my personal giveaway to win one of THREE paperback copies of THE BEAST OF BESWICK! Giveaway is international.

Each of the 30 authors is giving away an individual prize! So follow these four easy steps to enter.
